April Fool’s Song

This is my favorite April Fool’s Day indulgence.  The kids (ok, the younger ones) enjoy singing this song every year.

It’s a pretty predictable little ditty, I’m sure it would be loads of fun to make up your own verses to sing to this tune.

Homemade Fish Sticks

We really try to stay away from pre-packaged foods.  Usually that’s pretty easy because we’re home most of the time.  But when we’re not home and time is short we might compromise, especially if I’m very tired.  And that brings me to my excuse for buying fish sticks yesterday.  We weren’t home long enough to cook and we were in a big time crunch to just fix and eat lunch, so I caved.

Today is a different story so I decided to finish off the fish sticks and also make some Tuna Puffs so we could do a little taste comparison.  It’s good when it’s so easy to show the kids that homemade is cheaper, better for us, and tastier all in one sitting.  Yes, there’s a certain something about the way a Gortons fish stick tastes, but it just ain’t home cookin’!  When you give it a fair chance right next to the real deal, we know the answer, but it’s nice the kids got to see it.

Totally forgot to take pictures of this, but you’re not really missing much, I’m a horrible photographer.

Here’s the recipe.

You’ll need:

  • 2 12 oz cans Tuna, drained but save ½ cup of the liquid (you can substitute Salmon if you’re in the mood)
  • 1 cup Flour
  • 2 Eggs, beaten a bit
  • 1 rounded Tablespoon Baking Powder

Heat some oil in a skillet.  While that’s heating up drain your fish, save ½ cup of the liquid and set that aside for now.  Beat the eggs and add them and the flour.  Now is the time to add some seasoning, garlic and parsley pop to mind!

Stir the baking powder into the reserved fish liquid and enjoy the foaminess!  Stir that into the meat mix.  Drop by spoonfuls into the hot oil.  Let brown for a couple of minutes, then turn and repeat the waiting part.  Drain on paper towels or paper bags.  Serve with ketchup or tarter sauce, both of which are also miles better when made at home.
